1 Onion, chopped.
500g New potatoes, cut into chunks and parboiled.
1/2 Large can of chopped tomatoes.
1/2tsp Ground cumin.
1/4tsp Cumin seeds.
1tsp Turmeric powder.
1tsp Ground coriander.
1tsp Garam masala.
1tsp Chilli powder.
1inch Ginger, finely chopped.
8 Small tomatoes, chopped.
250ml Vegetable stock.
A little olive oil.
Fresh coriander, chopped.
1. Heat the oil, ginger and spices for about one minute until fragrant.
2. Add the onion and soften.
3. Add the potatoes and coat in the spices.
4. Add the chopped tomatoes and the stock. Bring to the boil and simmer until the potatoes are tender.
5. Stir in the small tomatoes and coriander.
6. Season with salt and pepper.
