Spiced Sweet Potato and Pepper Soup

500g Sweet potato (approx.), peeled and chopped.
1 Large courgette, chopped.
1 Pepper, deseeded and chopped.
1 Large onion, chopped.
2 Vegetable stock cubes, made up to 1000ml.
1tsp Garam masala.
1/2tsp Curry powder.
1/8-1/4tsp Cayenne pepper.
A little olive oil.

1. Soften the onion in the olive oil.
2. Add the spices and the chopped vegetables.
3. Add the stock plus a further 450ml of water.
4. Bring to the boil then simmer until the vegetables are soft.
5. Blend using a hand blender to desired consistency.
